Six and a half years after opening their Southeast Asian restaurant in the heart of Uptown Dallas, Braden and Yasmin Wages will open the doors to their third location in Fort Worth's The Shops at Clearfork on Monday, October 9, 2017

Adorning several of the walls in Southlake's Malai Kitchen are photographs of fishing boats, markets, and other scenes from Thailand and Vietnam. The pictures were captured by Braden and Yasmin Wages, the owners and creators of the restaurant. The Wages have used their travels, experiences and talents to bring their take on traditional Thai and Vietnamese cuisine to North Texas...

...the folks at Malai Kitchen have supplied me with a photo of their new sugar-cane juicer. Owners Braden and Yasmin Wages now have two of these babies in operation, one in Uptown; the other in Southlake. A third will go in to their Fort Worth restaurant scheduled to open in September...

Yes, it’s true; pork or shrimp would be better on a banh mi. Same goes for pate or a fried egg. Malai Kitchen, however, are experts at making not-meat great. The tofu is fried and dropped onto a baguette with textbook pickled carrots, daikon, cucumbers and a spread of spicy aioli and Sriracha. Herbs file in, too. Banh mi sandwiches, the best ones, have an orchestra of crunch and heat and bursting herbs; Malai Kitchen’s version, with a light fry on the tofu, makes for a symphony.
